🛒Ingredients

  • Honey - if you're out of honey, maple syrup makes a great substitute.
  • Carrots - you can slice them into thicker circles or go for carrot fries, just like I did. Baby carrots are fine, but be mindful as they might char faster because of their small size.
  • Oil - begin with 1 tablespoons and adjust as needed.
  • Rosemary - don't have rosemary? Thyme works just as well! Keep 3 sprigs of fresh rosemary for the honey marinade and extra for both air frying and garnishing.
  • Salt - once they're done, sprinkle some sea salt flakes on top for that perfect finish.
  • For serving - we love adding crumbled feta cheese, more fresh herbs, and honey.

📋Tips

  • Baby carrots are an option, but keep in mind they'll cook up faster, shaving off about 5-7 minutes from your cooking time.
  • When it comes to oil, less is more! In my experience, using less oil makes for crispier and tastier air fryer carrot fries.
  • Most fried foods, including these carrots, don't reheat well. For optimal flavor, reheat them on the same day they were made in a preheated air fryer at 375°F for 3-5 minutes.
  • I always preheat my air fryer, similar to how you'd preheat an oven. Skipping this step means you'll need to tack on some extra cooking time.

Storage Instructions

  • 🍱To Store. For storing, pop those carrots into an airtight container in the fridge, but aim to use them within 1-2 days max.
  • To Reheat. When you're ready to reheat, use the air fryer at 375 degrees Fahrenheit or the oven at 425 degrees Fahrenheit. No need to add any extra oil.
  • To Make Ahead. To save time, you can prep your carrots up to 2 days ahead of air frying. Just stash them in an airtight container in the fridge until you're ready to cook!

  • 1 pound regular carrots
  • 1 tablespoons of olive oil
  • 4 tablespoons honey, liquid type
  • 3 stalks fresh rosemary, for marinade + more for air frying and garnish
  • 1 teaspoon crushed sea salt flakes
  • black pepper to taste

Instructions
 

  • Preheat air fryer to 375 degrees Fahrenheit, following the manufacturer's instructions, typically around 4-5 minutes.
  • Carrots. Wash the carrots and pat them dry with some paper towels. Trim the ends, making sure to remove the very thin parts as they tend to char quickly. Then, cut the carrots in half; mine were about 4 inches long and ¾ inch thick when sliced into strips.

  • Toss the carrots in a mix of honey, oil, rosemary, salt, and pepper. Let them sit for around 15-30 minutes to soak up those flavors. Lightly spray the air fryer basket with some oil and lay the carrots out in a single layer.
