Why You'll Love This Ground Beef Stroganoff
✅ Family favorite - Once you add fluffy egg noodles to a recipe it’s a meal the whole family will enjoy.
✅ Easy to make - Just a few simple steps to make this easy ground beef stroganoff recipe for a quick weeknight meal.
✅ Adaptable - If you can’t find fresh mushrooms, use whatever vegetable you have on hand. Prefer rice to pasta, no problem. You can also serve this stroganoff over quinoa or mashed potatoes. or drizzle over veggies!
✅ No cream of mushroom soup - Thick and hearty, it's the ultimate comfort food made from scratch and with real ingredients.
🛒 Ingredients
- Ground beef - use lean ground beef, 90% or 93%! High quality, less prep and no need to drain from excess fat.
- Butter - salted or unsalted butter both work. You can use olive oil instead.
- Dry pasta - use a short shaped pasta, spaghetti noodles or for a traditional old-fashioned beef stroganoff recipe use wide egg noodles.
- Onion - I used a yellow onion, finely diced, but white also works.
- Garlic - fresh garlic cloves, minced are best but jarred garlic will also work. If you've only got garlic powder on hand you can use it as well.
- Baby bella mushrooms - baby bella mushrooms, sliced, add more of a meaty texture. If you can’t find baby bella, any fresh mushrooms will work like meaty cremini mushrooms. TIP: To save time, buy pre-sliced mushrooms!
- Salt - a touch of salt enhances the flavor.
- Ground black pepper - black pepper adds more depth of flavor.
- Heavy cream - creates a rich and silky broth. To prevent curdling, bring all refrigerated ingredients to room temperatire, including heavy cream.
- Worcestershire sauce - Worcestershire adds a deep savory flavor. A dash of soy sauce would also work here but will add slightly different flavor profile.
- Cornstarch - add cornstarch if you want a thicker gravy.

✅ EXPERT TIP: If your ground beef has higher fat content, brown it first and drain off the excess fat before mixing it with your sauce.
🥘 Instructions
Cook the vegetables and meat. Heat 1 tablespoon of butter in a large skillet over medium-low heat. Add diced onion and stir for 5-6 minutes until softened, then incorporate minced garlic and stir for one minute.
Incorporate sliced mushrooms and stir for 3 minutes to soften.
Add ground beef. Add minced meat and let it cook, stirring occasionally, for 3-4 minutes.
Add the remaining sauce ingredients. Once the meat is pale brown, heavy cream, salt, pepper, and Worcestershire sauce.
Stir to combine and reduce heat to low.
✅ EXPERT TIP: For smooth beef stroganoff, use room temperature heavy cream. To prevent curdling, you can temper the dairy by adding a bit of the hot mixture to the cream in a separate bowl, then mix it back into the dish.
Simmer the sauce and cook pasta. Let it simmer for 8-10 minutes to infuse flavors.
Adjust salt as needed. In the meantime, cook the pasta following its manufacturer's instructions.
Thicken the sauce. Mix one tablespoon of cornstarch with 1 tablespoon of water and pour it in. Stir over heat until it thickens.
Repeat with an extra tablespoon of cornstarch to reach the desired consistency. Just bare in mind that the pasta will absorb a lot of sauce.
Serve! Incorporate cooked pasta into the skillet and serve warm.
📋 Tips and Variations
- If you are not using lean ground beef make sure to cook the ground beef first and then drain off the excess grease.
- For quicker prep, you can substitute the heavy cream and mushrooms for cream of mushroom soup. Canned versions are not my favorite but you can quickly whip up a batch of homemade soup yourself.
- Instead of ground beef feel free to use ground chicken or ground turkey. Even a vegan stroganoff, simply use more mushrooms or use vegan beef substitutes.
- Stir in a touch of Dijon mustard for more savoriness in this classic beef stroganoff recipe.
- For gluten free, serve the ground beef stroganoff with your favorite gf pasta, serve over rice or mashed potatoes.
For a lightened-up version of this beef stroganoff use half and half instead of heavy cream. Or try Greek yogurt or sour cream to make the creamy sauce.
Storage Instructions
- 🍱To Store. Store any leftovers in airtight containers in the refrigerator within 2 hours of cooking. Leftovers will keep for 3-4 days in an airtight container.
- 🥶Freezing. Freeze uneaten ground beef stroganoff for up to 3 months.
- 🔥To Reheat. Allow the beef stroganoff to defrost in the fridge overnight. Reheat small portions in the microwave for quick and easy meals. Add a splash of water or broth to the pasta mixture before reheating to retain moisture. For larger portions, reheat on the stovetop over low to medium heat. Add a bit of low sodium beef broth, water or cream if the mixture has thickened too much during storage.
Serving Suggestions
When it comes to serving, Ground Beef Stroganoff offers great flexibility!
- Salad: cucumber dill salad, arugula pesto salad, Jennifer Aniston salad.
- Side dish: Pair it with noodles, rice, buckwheat, or classic favorite of many - mashed potatoes, mashed sweet potatoes or cauliflower mashed potatoes.
- With vegetables: drizzle the sauce on top of roasted potatoes, roasted carrots, cabbage steaks or brussels sprouts.
