Make homemade meatloaf faster with this easy Air Fryer Ground Beef Meatloaf recipe. It has a tender middle, lightly crisp edges, and a sweet-savory glaze.

It is simple enough for beginner cooks and quick enough for a busy weeknight dinner. Making two smaller loaves also makes it a great choice for families who do not need one large oven-baked meatloaf.

One thing I have learned is that shaping the mixture into two smaller loaves helps it cook evenly without drying out.

I make this homemade meatloaf about twice a month because it is easy, affordable, and works well on busy nights. Most of the ingredients are usually already in my kitchen.

My family loves the sticky ketchup BBQ glaze, so I usually make a little extra for dipping. It always disappears faster than I expect.

I prefer making two smaller loaves because they cook more evenly in the air fryer. They also make great meatloaf sandwiches for lunch the next day.

🛒 Ingredients

  • Ground Beef - Lean ground beef gives you a juicy meatloaf without excess grease. I usually use 90/10 ground beef.
  • Panko Breadcrumbs - These help bind the meatloaf while keeping the texture tender. Regular breadcrumbs work too, but panko gives it a better texture.
  • Onion - Cook the onion first so it turns soft and slightly sweet. I prefer this over raw onion, which can leave crunchy bits in the meatloaf.
  • Worcestershire Sauce - This adds a deep savory taste and gives the meatloaf that classic homemade flavor. I would not skip it if you have it in the pantry.
  • Ketchup and BBQ Sauce - Ketchup adds sweetness to the meat mixture, while ketchup and BBQ sauce create the sticky glaze on top. Use a BBQ sauce you already enjoy, since its flavor comes through after air frying.
  • Fresh Parsley - Adds freshness and balances the richness of the beef. Dried parsley works fine if that's what's in the pantry.

🥘 How To Make Air Fryer Ground Beef Meatloaf Step By Step

  1. Cook the onion: Heat the olive oil in a small pan, then cook the onion for 2 to 3 minutes until soft, fragrant, and slightly translucent. This removes the sharp onion bite.
  2. Mix the binder: In a large bowl, stir together the breadcrumbs, milk, parsley, garlic, egg, Italian seasoning, salt, pepper, Worcestershire sauce, and ketchup until evenly combined.
  3. Add the beef: Add the ground beef and cooked onion. Mix gently until just combined. This is where people often go wrong. Overmixing can make meatloaf dense instead of tender.
  4. Shape the loaves: Divide the mixture into 2 small loaves and smooth the edges. Smaller loaves cook faster and help the edges turn golden while the center stays juicy.

  1. Air fry first: Preheat the air fryer to 175°C / 350°F. Cook the loaves for 15 minutes, or until the outside starts to firm up and lightly brown.
  2. Add the glaze: Mix the ketchup and BBQ sauce, then spread it over the tops. It should look glossy and thick enough to coat the meatloaf.
  3. Finish cooking: Air fry for another 10 minutes, until the glaze looks sticky, the edges are golden, and the internal temperature reaches 74°C / 165°F.
  4. Rest before slicing: Let the meatloaf rest for 5 to 10 minutes. This helps the juices settle, so the slices hold together better.

Important Tips Before You Start

  • Flavor Tip. Fresh garlic is absolutely worth it here. The flavor comes through much better than garlic powder.
  • Texture Tip. If the mixture feels overly wet, add a tablespoon of breadcrumbs at a time until it holds its shape.
  • Shortcut. Use dried parsley instead of fresh when you're short on time.
  • Make-Ahead Tip. Mix and shape the meatloaf up to one day ahead. Keep covered in the refrigerator until ready to cook.
  • Common Mistake. Don't skip the resting time. The first time I made this, I sliced it immediately and it fell apart. Just a few minutes of resting makes a huge difference.

Easy Swaps

  • Ground turkey instead of beef.
  • Regular breadcrumbs instead of panko.
  • Use a sweeter or smokier BBQ sauce to change the flavor of the glaze.
  • Finely diced bell peppers added with the onions.
  • Use dried parsley if you do not have fresh parsley.

I strongly prefer beef for the best homemade meatloaf texture, but turkey works well if that's what you have.

What To Serve With Air Fryer Meatloaf

This air fryer homemade beef meatloaf pairs well with simple sides.

  • Mac and cheese.

For leftovers, I love turning slices into meatloaf sandwiches with extra ketchup.

  • 🍱To Store. Store leftovers in an airtight container in the refrigerator for up to 4 days.
  • 🥶To Freeze. Wrap individual slices tightly and freeze for up to 3 months.
  • 🕒 To Make Ahead. Prepare and shape the meatloaf up to 24 hours before cooking.
  • 🔥To Reheat. Reheat in the air fryer at 325°F for 3 to 5 minutes or until warmed through. I've found the air fryer keeps the edges slightly crisp, while the microwave tends to soften them.

  • 1 pounds lean ground beef
  • ½ cup breadcrumbs, panko
  • ¼ cup finely chopped onion
  • 2 tablespoon milk
  • 2 tablespoon olive oil, for frying onion
  • 2 tablespoon fresh parsley, or 1 tablespoon dried
  • 1 garlic clove, minced
  • 1 egg yolk, or whole egg
  • ½ teaspoon Italian seasoning
  • ½ teaspoon salt, to taste
  • ¼ teaspoon black pepper
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon ketchup

Topping

  • ¼ cup ketchup
  • ¼ cup BBQ sauce

Instructions
 

  • Prep air fryer: Preheat air fryer to 175°C / 350°F. In a pan with oil cook onion until soft about 2–3 minutes.
    ¼ cup finely chopped onion, 2 tablespoon olive oil
