21 Make-Ahead Thanksgiving Recipes by Day

Make ahead Thanksgiving recipes by day means sorting the whole menu by how far in advance each dish actually holds, so the cooking gets spread across the week instead of crammed into one afternoon.

This is my own Thanksgiving lineup organized into four prep days: three days out, two days out, the day before, and the day itself. Everything in the first three groups can be made ahead and reheated or finished quickly on Thanksgiving Day.

Work through this list a section at a time and the only thing left for Thursday is the turkey and the reheating.

Tips for Spreading Out the Cooking

  • Write your menu on a calendar with each dish under its prep day – seeing it laid out is what actually makes the plan stick once the week gets busy.
  • Label everything you refrigerate ahead – a fridge full of foil wrapped dishes all looks the same by Thursday morning.
  • Reheat covered dishes at 325°F with a splash of extra liquid – low and covered brings food back without drying it out.
  • Leave crisp toppings off until the day – streusel, fried onions and breadcrumb toppings go on right before the final bake so they stay crunchy.
  • Do the assembly, not just the shopping, ahead of time – a chopped vegetable is more useful at 4pm on Thursday than a bag of groceries.

Make Ahead Thanksgiving Questions

What Thanksgiving dishes should never be made ahead?

The turkey, stuffing that goes inside the bird, and anything meant to be crisp, like a streusel topping or fried onions. Those need to happen close to serving time.

How do I keep track of what is prepped for which day?

A simple written list with four headings, three days out, two days out, the day before and the day of, is enough. Cross off each dish as you finish it.

Can I freeze Thanksgiving side dishes instead of refrigerating them?

Some can. Unbaked casseroles, rolls and pie generally freeze well for a few weeks. Assembled salads, deviled eggs and anything with fresh herbs are better refrigerated a day or two ahead instead.

Work through the list by day, and by Thanksgiving morning the only thing left is the turkey and a stack of dishes to reheat.
