These baked apricots are sweet, buttery, and ready in just about 25 minutes total. With juicy baked apricots, warm spices, and a crunchy topping—it’s the perfect no-fuss summer dessert.

I make this one often when I’ve got a basket of ripe fruit and want something fast and homemade. No mixer, no fancy tools—just a baking dish and a few pantry basics.

  • Apricots – Pick firm-ripe ones so they hold their shape while baking.
  • Butter – Helps the fruit brown and adds rich flavor.
  • Coconut sugar or brown sugar – I like coconut sugar for a deeper taste, but use what you have.
  • Cinnamon + cardamom – These give it warmth and a cozy feel.
  • Salt – A pinch sharpens all the other flavors.
  • Graham crackers – Crushed on top for a nice crunchy bite.
  • Toasted almond flakes – Toasted nuts bring texture and a nutty finish.
  • Vanilla yogurt or ice cream – Optional, but makes it extra good when served warm.

🥣How To Bake Apricots Step by Step

  1. Prep the fruit: Wash and halve the apricots, removing the pits.
  2. Get your oven ready: Preheat to 400°F and butter a baking dish.
  3. Arrange: Place apricots cut side up in the dish.
  4. Mix the topping: Stir together the sugar, cinnamon, cardamom, and salt. Sprinkle over the apricots.
  5. Add butter: Place a small piece of butter on each apricot.
  6. Bake: Bake for 15–17 minutes, until golden and softened.
  7. Finish and serve: Top with graham crackers and almonds. Serve warm with yogurt or ice cream if you'd like.

Use firm, ripe apricots: If your apricots are too soft, they’ll turn mushy in the oven. You want them tender after baking, not collapsed—so choose ones that give slightly when pressed but still hold their shape!

    • ¼ teaspoon cinnamon
    • 1 pinch cardamom ground
    • 1 pinch salt kosher
    • 1-2 tablespoon graham crackers, crushed
    • 2 tablespoon toasted almond flakes
    • vanilla yogurt or vanilla ice cream for serving, optional
