Waffles with puff pastry are my new favorite brunch hack—crispy, golden, and ready in just 15 minutes! All you need is 1 sheet of puff pastry, a waffle maker, and your favorite toppings. Sweet or savory, this fun twist is perfect for busy mornings or last-minute guests.

No need to roll out dough or turn on the oven. These are quick, easy, and always a crowd-pleaser.
🛒Ingredients
- Puff pastry – Use store-bought frozen puff pastry. Thaw and cut—no rolling needed.
- Creamy cheese – I use Philadelphia cream cheese, but ricotta or goat cheese work too.
- Toasted almond flakes – Adds crunch and a nutty finish. Toast in a dry pan for a few minutes.
- Jam – Any favorite will work. I like raspberry or apricot.
- Avocado or olive oil – For brushing the waffle maker so nothing sticks.

🥣How To Make Crisp Puff Pastry Waffle
- Prep the dough: Lightly flour your surface and cut thawed puff pastry into squares (I do 2½ x 2½ inches).
- Preheat waffle maker: Brush with a little oil.
- Cook: Add the squares to the waffle maker (4–6 at a time, depending on size). Cook for about 4–5 minutes or until golden and crisp.
- Serve: Top with creamy cheese, almonds, and jam—or go savory with ham, cheese, or sour cream.

Rita's Tip
Don’t roll out the pastry – This keeps the layers thick, flaky, and perfectly crisp once cooked. Rolling it out flattens the dough and takes away that signature puff!
📋Tips
- Don’t roll out the pastry – Trust me, I’ve tested both ways, and keeping the dough as-is gives you the best puff and flakiest texture. Just slice and go.
- Toast the almonds ahead of time – I always do a small batch and keep them in a jar. That way, I can sprinkle them over salads or these waffles without any extra step.
- Cut even squares – It may sound basic, but if they’re uneven, some parts puff more than others. A pizza cutter works great for this.
- Test one first – Every waffle maker has its own personality. Start with a single square to get the timing just right before adding a full batch.
- Try whipped ricotta – If you’re making a savory version, a little whipped ricotta with lemon zest is amazing. It’s creamy, tangy, and feels fancy with zero effort.
- Go sweet or savory – I’ve topped these with Nutella and strawberries for the kids, and with ham and cheese for a snacky lunch. You really can’t go wrong.
- Reheat in the oven – If they go soft, pop them in the oven for a few minutes to bring the crisp back. The toaster oven works too!
- Make ahead – When I’m planning brunch, I cut the pastry the night before and keep the squares in the fridge. Saves time and mess in the morning.
- Add flavor before cooking – Sprinkle with cinnamon sugar for a sweet treat, or garlic powder and herbs for savory. It makes such a difference!
- Use leftovers creatively – Don’t toss the extras! Stack them with scrambled eggs for breakfast or dip them in soup later. They’re flaky and perfect for soaking up flavor.
🍱Storage Instructions
- 🍱To Store. Keep in an airtight container for up to 3 days in the fridge.
- 🥶Freezing. Layer with parchment and freeze in a zip bag up to 1 month.
- 🔥To Reheat. Toast in the oven at 350°F for 5 minutes to crisp them up again.
