Bananas are a baking staple in our home. We incorporate them into different breakfast recipes, from banana cookies and oil-free pumpkin banana muffins to delightful banana raisin bread.

🛒Ingredients
- Mashed Bananas - for optimal flavor in your banana muffins, choose overripe bananas with brown spots and a strong banana aroma when mashing them. Aim for 2-3 large, brown bananas, as they contribute to sweeter muffins with a richer taste. However, if you only have yellow bananas on hand and crave moist banana bread, rest assured that the recipe is still effective and will yield delicious results.
- Baking powder - provides the muffins with a denser texture, while baking soda contributes to a lighter, fluffier texture.
- Salt - a small amount of fine sea salt or kosher salt subtly enhances the flavors of the bread.
- Butter - if using salted butter omit the salt from this recipe.
- Vanilla extract - For an added depth of flavor and a hint of sweetness, incorporate pure vanilla extract. If vanilla isn't available, consider substitutes like almond extract or rum extract. This being said, those air fryer muffins will taste great without vanilla too!
- Eggs - using the eggs at room temperature helps to not make the muffins heavy.

Add-ins - you have the freedom to include any variety of chocolate chips to impart a delightful taste to the muffins!
🥣How To Make Air Fryer Muffins
Prep. Prepare silicone muffin liner. I usually don’t spray them with oil.
Combine dry ingredients. Mash bananas in a bowl, add sugar, melted butter, beaten eggs, vanilla extract and mix to combine.
Add dry ingredients. Add flour, baking powder and baking soda to the wet ingredients, then mix to combine.
Divide between muffin cups and air fry. Scoop batter into prepared muffin liners and bake in air fryer at 330°F for 12-14 mins or until tooth pick comes out clean.
✅ Preheating air fryer is not necessary here but you can do it, the baking time will be less, just keep an eye on the muffins and for doneness, test with a toothpick.
Allow to cool. After baking, take the muffins out of the oven and allow them to cool in the tins for a brief period. Later, transfer them to a wire rack, letting them cool entirely before indulging in your freshly baked homemade banana muffins!
This recipe makes 12 muffins. I baked these air fryer muffins in two rounds, 6 muffins at a time.
Make In The Oven
If you don't have an air fryer, you can still make these banana bread muffins in the oven.
- Preheat Oven: Preheat your oven to 350°F.
- Prepare Batter: Mix the ingredients according to the recipe below until you achieve a smooth batter.
- Fill Muffin Tins: Scoop the prepared batter into 12 lined muffin tins, distributing it evenly among them.
- Bake: Place the muffin tins into the preheated oven and bake for approximately 18 to 20 minutes. Check for doneness by inserting a toothpick into the center of a muffin; if it comes out clean (with no wet batter sticking to it), the muffins are ready.
- Cool and Enjoy: Once baked, remove the muffins from the oven and let them cool in the tins for a few minutes. Then transfer them to a wire rack to cool completely before enjoying your homemade oven-baked banana bread muffins.
📋Tips
- If you haven't preheated your air fryer, please note that the second batch of muffins may bake faster than the first batch because the air fryer has been warmed up by the initial batch. Keep a close watch on the second batch to prevent overcooking.
- I simply used a larger whisk to blend everything but you can also use a standheld mixer for this.
- How to ripen bananas - If you have semi-ripe bananas and an urgent need to make these muffins, expedite the ripening process of your bananas in the air fryer by following the instructions on how to quickly ripen a banana.
- To prevent overflow, avoid overfilling the muffin liners. Fill them only halfway to ensure proper baking.
- For an added treat, try incorporating chocolate chips or raisins into the muffin batter!
- To store your muffins, place them in an airtight container at room temperature for a few days. Alternatively, freeze them in an airtight container for a few months.

✅ Browning - The air fryer tends to give muffins a more pronounced browning than the oven, but rest assured, this doesn't impact the flavor at all.
Storage Instructions
- 🍱To Store at room temperature. For optimal storage, place your muffins in an airtight container at room temperature, where they can stay fresh for a few days.
- To Refrigerate. Once the muffins have completely cooled down, store them in an airtight container in the refrigerator. They'll stay fresh for up to 5 days.
- 🥶Freezing. After they've cooled completely, place them in an airtight container and freeze for up to a month. To consume, thaw the muffins overnight in the refrigerator and then bring them to room temperature on the counter before eating.
- 🔥To Reheat in the Microwave. Reheat the muffins in the microwave by using 10-second intervals until they are warmed through to your liking.
- To Reheat in Air Fryer. Set the air fryer to 350°F and reheat the muffins for 1 to 2 minutes until they reach the desired temperature.
