Ingredients

  • 1 pound asparagus
  • 7 ounce cherry tomatoes, cut in half
  • cup olive oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 3 tablespoons panko breadcrumbs
  • 4 tablespoons parmesan, grated
  • 2 garlic cloves, pressed

Instructions

  • Preheat the Oven: Turn on your oven to 425°F (220°C).
  • Prepare the Seasoning: Mix together olive oil, garlic, paprika, salt, pepper, parmesan cheese, and panko breadcrumbs on a baking sheet.
⅓ cup olive oil, 1 teaspoon smoked paprika, 1 teaspoon salt, ½ teaspoon black pepper, 3 tablespoons panko breadcrumbs, 4 tablespoons parmesan, 2 garlic cloves
  • Coat the Asparagus: Place the asparagus on the baking tray using tongs. Toss the asparagus with the seasoning mixture until fully coated (just use your hands). Add tomatoes.
1 pound asparagus, 7 ounce cherry tomatoes
  • Add More Cheese: Sprinkle the remaining parmesan cheese on top.
  • Spray with Olive Oil: Give the asparagus a light spray of olive oil. It helps it cook just right!
  • Bake It: Air fry until the asparagus is crisp-tender and starting to brown in spots. Cook time will depend on your oven and thickness of asparagus. Roasting asparagus with tomatoes will take about 20-25 minutes. When it's done, it will have browned and the asparagus will be tender and delicious!

Notes

  • How to Choose the Best Asparagus:
Look for firm, straight spears with tightly closed tips. Avoid limp or wilted stalks.
  • Thicker spears are robust and great for grilling or roasting, while thinner ones cook quickly for steaming or sautéing.
  • How To Store Oven Roasted Asparagus:
Cool completely, then store in an airtight container in the fridge for up to 3-4 days.
  • How to Reheat Asparagus:
Oven Method: Preheat to 350°F, place asparagus on a baking sheet, cover loosely with foil, and heat for 5-10 minutes.
