Honey Soy Chicken Bowl (Easy and Quick Meal Prep!)

This Honey Soy Chicken bowl is ready in 15 minutes with basic ingredients. The sauce balances sweet, salty, and savory flavors, while the diced chicken breast is tender inside and crispy outside.

Ingredients
  

  • 5-6 ounces chicken, I prefer boneless skinless chicken thighs
  • 1 tablespoon soy sauce
  • 1 teaspoon honey or maple syrup
  • kosher salt and pepper to taste
  • 1 tablespoon sesame oil, toasted
  • ½ teaspoon fresh garlic, minced or more to taste

For Serving + Toppings

  • 1 cup cooked rice, about ½ cup uncooked
  • ¼ cup pickled onions and/or radishes
  • 1 teaspoon sesame seeds
  • ½ of avocado, sliced
  • ¼ cup cilantro
  • 1 tablespoon or more green onions
  • ¼ cup grated carrots, or matchsticks
  • ¼ cup cucumbers, diced

Instructions
 

  • Mix the sauce ingredients until smooth. Generously coat the chicken thighs with the marinade, season with salt & pepper, cover and refrigerate for 30 minutes.

  • Preheat the oven to broil on high, placing the rack in the middle. Broil the chicken for 7 minutes on each side until golden brown. Let it rest for 10 minutes before slicing.
  • Alternatively, preheat the oven to 425°F and cook the chicken for 20-25 minutes.
  • While the chicken rests, prepare your preferred grains or rice and serve with assorted toppings.
