Ingredients

  • 5 lemons , or ½ cup freshly squeezed lemon juice
  • ¼ cup granulated sugar
  • ½ cup cold water
  • ¼ cup whole milk
  • 3 cups vanilla ice cream
  • ½ tablespoon pure vanilla extract
  • lemon slices for garnish

Instructions

  • Use fresh lemons to squeeze half a cup of fresh lemon juice.
  • In a blender add the ice cream, water, lemon juice, milk, vanilla and sugar all at once. Blender together until combined and smooth.
  • Pour into a serving glass and garnish with a lemon slice. Enjoy!

Notes

  • Without blender - if your ice cream is soft enough, you can mix everything in a large mixing bowl. Alternatively, if you're making a larger batch and have a Kitchenaid mixer, you can use the paddle attachment to mix it in there.
  • To Store. Leftovers need to be stored in the freezer or you will end up with a big goopy lemon mess.
To Freeze. Store in a freezer-safe container for up to 3 months or turn leftovers into popsicles by pouring them into a popsicle mold. Thaw on the counter for a few minutes until soft enough to serve.
