BBQ Chicken Mini Pizza Recipe

Make these mini pizzas loaded with pulled chicken and golden brown cheese. Kids love pizza, right? This recipe is no exception, It makes the perfect lunch or dinner and leftover mini pizzas can get popped into a school lunch box the next day.

Ingredients
  

  • 2 ½ cup shredded chicken , or rotisserie chicken
  • ¾ cup BBQ sauce
  • 5 English muffins
  • ½ medium red onion, diced
  • salt and pepper to taste
  • 10 oz Colby jack cheese
  • 1 medium tomato, sliced
  • teaspoon dried oregano and
  • a handful of fresh parsley , for garnish

Instructions
 

  • Mix chicken and barbecue sauce in a large bowl.
  • Arrange cut English muffins on a baking tray and top with chicken, tomatoes, onions, and cheese. Put in the preheated oven to 425F and bake until cheese is melted (about 5-10 minutes).
  • Remove from oven and sprinkle each pizza with oregano, a drizzle of barbecue sauce and enjoy!

Notes

  • Chicken preparation: Ensure the chicken is cooked before adding it to the pizza. Boiled, fried, grilled, or leftover rotisserie chicken all work well. Shred or dice the chicken as desired.
  • Cheese: Use plenty of shredded cheese for a deliciously gooey cheesy pizza. Layer the cheese evenly to ensure every bite is filled with cheesy goodness.
  • Toppings: Customize your mini pizzas with your favorite toppings, such as tomatoes, red onions, pepperoni, bell peppers, mushrooms, or olives. Just be mindful not to overload the toppings to prevent the muffins from becoming soggy.
  • Barbecue sauce: Use your favorite barbecue sauce to add flavor to the chicken. You can also experiment with other sauces, like pizza sauce or pesto, for different flavor variations.
