Apple Bread With Apples

Ingredients
  

  • 2 cups tart apples , cored, peeled, and ¼-inch diced, such as Cortland or Granny Smith (about 2 medium)
  • 1 cup all purpose flour
  • ½ cup oatflour
  • 1 teaspoon baking soda
  • ¼ teaspoon kosher salt
  • ½ cup unsweetened applesauce
  • 2 tablespoons canola oil , or light olive oil or melted but cooled coconut oil
  • 2 tablespoons milk any kind you like, I used skim
  • ½ cup granulated sugar
  • 1 large egg
  • 1 teaspoon pure vanilla extract

Optional mix-ins

  • ½ cup toasted nuts

For Topping (Optional)

  • 1 tablespoon brown sugar
  • ¼ teaspoon ground cinnamon

Instructions
 

  • Prep. Preheat the oven to 350 degrees. Add non-stick spray to an 8 x 4-inch loaf pan.
  • Mix. Add the whole wheat flour, baking soda, cinnamon, and salt to a bowl. Whisk.
  • Whisk. Use a different bowl and whisk the oil, applesauce, milk, egg, sugar, and vanilla.
  • Make a well. Create a well in the middle of the dry ingredients, and pour in the wet ingredients. Stir by hand to combine (this will be thick and lumpy).
  • Add the apples. Fold in the prepared apples using a rubber spatula.
  • Transfer. Put the bread batter into the loaf pan. Pat the top flat with the spatula to level it out.
  • Make the topping. Add the cinnamon and sugar in a small bowl and sprinkle on top of the bread batter.
  • Bake. Put the loaf pan in the oven and bake for 25 minutes. Cover loosely with foil, and bake for an additional 20 minutes.
  • Cool. Place the bread pan on a wire rack and let the bread cool for 10 minutes. Turn the loaf onto the wire rack to finish cooling.

Notes

  • To Store. To keep the bread as fresh as possible, let it cool to room temperature before storing it in an airtight container or bread box.
  • Freezing. Baked bread is great for freezing for later! Wrap the bread in aluminum foil or plastic wrap, and then store it in a freezer-safe bag.
  • To Make Ahead. If you prep and bake the bread ahead of time, keep it sealed tightly to retain the moisture.
