  • Bell peppers (in different colors) - These vibrant peppers bring sweetness, color, and a satisfying crispness to the salad.
  • Corn kernels - Adds a touch of sweetness and a pop of color, enhancing the overall taste and texture.
  • Garlic - Infuses the salad with a savory and aromatic depth.
  • Olive oil - Forms the base of the dressing, adding a rich and smooth texture.
  • Fresh basil - Adds a fragrant and fresh herbal note to the salad.
  • Mustard - Provides a tangy kick that complements the lemon juice in the dressing.

  • Make sure to rinse the orzo with cold water to stop the cooking process.

Rita, could you suggest any gluten-free alternatives to orzo for the salad? I’m aiming to recreate this dish but need to accommodate a friend with dietary restrictions. Appreciate your insight!

Looks great but is there a way to bump up the protein in this salad? Maybe chickpeas or grilled chicken? What do you all think?

Actually, orzo isn’t technically a grain as suggested in your description, Rita. It’s a form of short-cut pasta, shaped like a large grain of rice. Always glad to see it featured in recipes, though!

Jamie, try adding some roasted pine nuts or fresh basil! It really elevates the whole dish.

I just made this salad (half recipe), love the ingredients but the dressing very bland that you cannot taste it. I would make this again but use a different dressing. Thanks for posting it.

Sorry to hear that Mary! Maybe add more salt or use seasoned salt? The flavor should not be strong or overpowering. I do not use too much salt in my recipes.
