- Sweet potatoes - You can find common orange sweet potato varieties like Beauregard and Jewel at most stores. These can be peeled or unpeeled and cut into ¾-inch cubes. For crispy potatoes, keep the skins on.
- Oil - Olive oil, avocado oil, sesame oil, or coconut oil.
- Seasoning - I’ve used ground cumin, garlic powder, black pepper, and salt. Italian seasoning or dried herbs can also be added to this mixture, such as dried oregano, basil, thyme, and rosemary.

Wash and scrub the potatoes and cut them into small cubes.
Preheat the oven to 400F and line a large baking sheet with parchment paper.
In a large bowl, toss the potatoes with seasonings and oil and transfer to the prepared baking sheet in one single layer.
Leave some space between each piece so they can crisp up nicely.
Bake for 30-35 minutes or until the potatoes are tender through the center and edges are lightly browned.
