Cottage Cheese Scrambled Eggs (19g Protein Breakfast)

Cottage cheese scrambled eggs are ordinary scrambled eggs with cottage cheese whisked into the raw egg before it hits the pan. One extra ingredient takes a serving to about 19 grams of protein, and it makes the eggs softer and creamier rather than heavier. You cannot see it and you cannot really taste it.

I started doing this because I wanted more protein at breakfast without drinking a shake, and it stuck because the eggs are genuinely better this way. They stay soft for a few minutes after they come off the heat, which plain scrambled eggs do not do.

🛒 Ingredients

  • Eggs. Four of them, and nothing special required. Whatever you normally buy is fine.
  • Cottage cheese. Half a cup, and this is the whole trick. Small curd disappears into the eggs more easily than large curd, though either works if you whisk it in properly. It adds the protein and the creaminess without really changing how the eggs taste.
  • Butter. Cook these in butter rather than oil. It is worth it for the flavor, and it gives you that diner style richness.
  • Salt and black pepper. That is genuinely all the seasoning this needs. Cottage cheese already brings a little salt of its own, so go light and taste at the end.

🍳 How To Make Cottage Cheese Scrambled Eggs Step By Step

  1. Whisk the base. Beat the eggs with the salt and pepper, then stir the cottage cheese through. Small curds left in the mix are fine, they melt as it cooks.
  2. Melt the butter. Medium heat in a nonstick skillet, until melted and just foaming.
  3. Pour and leave it. Add the mixture to the center of the pan and do not stir. This sets the base into folds instead of tiny curds.
  4. Push the edges in. Once the edges set, move the cooked egg gently toward the middle every few seconds for 3 to 5 minutes, until almost done but still soft.
  5. Serve. On their own, or with green onions, tomatoes and toast.

Rita's Tip

Take the pan off the heat when the eggs still look a shade too wet for your liking. There is enough heat left in the skillet to finish them in the twenty seconds it takes to carry the plate to the table, and that is the whole difference between creamy scrambled eggs and dry ones.

📋 Tips

  • Keep the heat at medium. High heat is the number one reason scrambled eggs go rubbery, and it also forces water out of the cottage cheese and leaves you with a wet pan.
  • Do not stir straight away. Let the edges set first, then start pushing. Constant stirring from the beginning breaks everything into tiny curds instead of soft folds.
  • Pull them while they still look a bit wet. They finish cooking in the pan and on the plate. Waiting until they look done in the skillet means dry eggs by the time you sit down.
  • Whisk the cottage cheese in well. Otherwise it sits in one spot and you get a mouthful of it rather than creaminess throughout.
  • A fork is fine. No need to dig out a whisk for four eggs. One less thing to wash.

  • 🍱To Store. Leftovers keep in an airtight container in the fridge for up to 2 days, though eggs are always best straight from the pan.
  • 🕒To Make Ahead. The better option. Whisk the eggs, seasoning and cottage cheese together the night before, cover, and refrigerate. Cook them fresh in the morning.
  • 🔥To Reheat. Gently. Fifteen second bursts in the microwave, stirring between, or a skillet over low heat. Rushing it toughens them.
  • ❄️Freezing. Not worth it. Scrambled eggs lose their texture completely once frozen and thawed.

Variations

  • Everything bagel seasoning. A good pinch over the top just before serving.
  • Add cheese. A small handful of shredded cheddar stirred in right at the end, for extra melt and a little more protein.
  • Greens. Wilt a handful of spinach in the butter first, then pour the eggs in on top.
  • Lighter. Use 2 percent cottage cheese rather than full fat. You keep the protein and lose a little of the richness.
  • Meal prep. Double it and portion it out with toast for high protein breakfasts through the week.

How much protein is in cottage cheese scrambled eggs?

About 17 to 19 grams per serving, from four eggs and half a cup of cottage cheese split between two plates. Plain scrambled eggs made with the same four eggs would give you around 12 grams a serving, so the cottage cheese is adding roughly half again on top.

Can you taste the cottage cheese in scrambled eggs?

Not really, and that is the point. Whisked into raw egg and cooked gently it melts into the curds and reads as creaminess rather than as cheese. People who say they dislike cottage cheese generally do not spot it here.

Do I need to blend the cottage cheese first?

No, as long as you whisk it in properly. Small curd needs the least work. If large curd is all you have and you want a completely uniform texture, a quick blitz with a stick blender does it.

Why did my eggs turn out watery?

Usually the pan was too hot. Cottage cheese holds a fair amount of moisture and high heat drives it straight out. Keep it at medium and it stays in the eggs where you want it.

Can I use egg whites instead?

Yes. Six to eight egg whites in place of the four whole eggs keeps the protein about the same. You lose the color and some of the richness, which makes the cottage cheese matter even more in that version.

Ingredients
  

  • 4 large eggs
  • ½ cup cottage cheese
  • 1 tablespoon butter
  • ¼ teaspoon salt
  • ⅛ teaspoon black pepper

Instructions
 

  • Whisk. Crack the eggs into a medium bowl, add the salt and pepper, and whisk until the yolks and whites are fully combined. Add the cottage cheese and stir it through. Do not worry about breaking down every curd, the small bits melt away as the eggs cook.

Notes

  • Medium heat, not high: high heat is the single reason scrambled eggs turn rubbery. Cottage cheese also releases water when it gets too hot, which leaves you with a wet pan.
  • Whisk the cottage cheese in properly: if it is not distributed evenly you get pockets of it instead of an even creamy texture right through the eggs.
  • Take them off looking slightly underdone: eggs keep cooking in the residual heat of the pan and on the plate. If they look perfect in the skillet, they will be dry by the time you eat.
  • Prep it the night before: whisk the eggs, seasoning and cottage cheese together, cover, and keep it in the fridge. In the morning it is a 5 minute job.
