Ground chicken cooks fast, the pickled carrots basically make themselves while you do everything else, and the spicy mayo ties it all together so nothing tastes bland. It's a great beginner-friendly dinner too, nothing here requires any real technique, just a skillet and a bowl.

Can I use white rice instead of quinoa?
