Prepare the Simple Syrup: In a small saucepan, combine ½ cup sugar and ½ cup water. Heat over medium, stirring until the sugar fully dissolves. Remove from heat and cool for 5 minutes.
1 cup granulated sugar, ½ cup water
Coat the Cranberries: Add cranberries to the syrup and stir gently to coat. Let sit for 10 minutes.
1 cup fresh cranberries
Dry the Cranberries: Lift out with a slotted spoon and let excess syrup drip off. Spread in a single layer on a wire rack or parchment. Dry for about 1 hour, until tacky to the touch.
Sugar Coat the Cranberries: Place remaining ½ cup sugar in a shallow dish. Roll cranberries one at a time until evenly coated and frosted.
Dry Again: Transfer to a clean baking sheet and let dry for 30 minutes, until the sugar hardens and turns crisp.
