Make Sauteed cabbage. Heat olive oil in a skillet over medium heat. Saute onion for 2-3 minutes, then add carrots for 3 more minutes.
Add cabbage and saute for 5 minutes. Create a well in the middle, add tomato paste, cook for 1 minute. Season with salt, pepper, sugar.
Add water, braise on low for 25 minutes, stirring every 5 minutes. Serve with parsley and sour cream. You may have leftovers from sauteed cabbage as for the filling of 8 tortilla pockets you’ll need about 2 cups of sauteed cabbage.
Make The Lavash Wraps. Mix the sauteed cabbage with dill or parsley if using. Fresh herbs are optional but add more flavor.
On each tortilla add 3 tablespoon of sauteed cabbage each, top with mozzzarella. Wrap like in photo, and brush with egg yolk.
Heat up a skillet over medium heat and add cooking oil. Cook for 1-2 minutes on each side. Serve with sour cream.
