Blend the lentils: Blend the drained lentils with the plant-based milk, turmeric, and remaining ¼ teaspoon salt until mostly smooth. Pulse in the baking powder.

Mix the batter: Pour the lentil mixture into the sweet potato mixture and stir until well combined.
Heat the oil: Add a thin layer of vegetable oil to a large skillet and heat over medium.

Cook the fritters: Scoop about 3 tablespoons of batter per fritter into the skillet and gently flatten. Cover and cook for 4–5 minutes.
Flip and finish: Turn the fritters over and cook uncovered for another 4–5 minutes, until golden brown and cooked through.
Serve: Transfer to a paper towel-lined plate and serve warm with ketchup, Greek yogurt, sour cream, or your favorite dipping sauce.
