Mexican Fresh Corn Salsa

Fresh and healthy Mexican corn salsa made in minutes. This homemade, spicy taco salsa is perfect as a dip, for tacos, or for salads.

Ingredients
  

  • 24 ounces frozen corn, thawed
  • ½ red onion, finely diced
  • 2 jalapenos, seeded and finely diced
  • 1 bunch cilantro, finely chopped
  • 2 limes, juiced
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon chili powder
  • teaspoon ground cumin

Instructions
 

  • Add the corn, red onion, jalapenos, and cilantro to a large bowl.
  • In a smaller bowl, combine the lime juice and seasonings.
  • Pour lime dressing over the corn salsa and toss together.
  • Cover and refrigerate until ready to serve. Serve with tortilla chips.
