  • 2 large pears
  • 2 cups arugula
  • 1-2 teaspoons extra virgin olive oil, spray
  • 2 ounces blue cheese, I used Gorgonzola
  • cup pecans or walnuts, chopped
  • 1-2 tablespoons honey
  • ¼ teaspoon red chili flakes
  • flaky salt, for garnish, optional
  • 1 ½ tablespoons dried cranberries, chopped

Instructions
 

  • Preheat the oven: Preheat your oven to 400°F.
  • Prepare the pears: Slice the pears in half lengthwise and scoop out the core and seeds. Place them in a cast iron skillet or baking dish, cut side up. Drizzle with olive oil and then flip them cut side down.

  • Bake the pears: Bake for 15 minutes.
  • Fill and bake again: Remove the skillet from the oven and turn the pears cut side up. Fill each pear with blue cheese, nuts, and cranberries. Return to the oven and bake for 7–8 minutes, or until the cheese begins to melt.

  • Assemble the dish: On a serving platter, arrange a bed of arugula and lightly spray it with olive oil. Place the baked pears on top. Drizzle with honey and garnish with additional nuts, cranberries, red chili flakes, and flaky sea salt for extra flavor.

  • Optional twist: For a festive touch, substitute dried cranberries with a dollop of cranberry sauce—about 2 teaspoons per pear.

Notes

  • To Store: Keep baked pears in an airtight container in the fridge for up to 3 days to maintain their freshness and flavor.
  • To Freeze: Wrap each pear half in plastic wrap and place them in a freezer-safe bag to prevent freezer burn and save them for later.
  • To Reheat: Warm the pears in a 350°F (175°C) oven for about 10 minutes to restore their texture and flavor.
