Prepare dressing: whisk all dressing ingredients until smooth.
1 teaspoon light miso, 1 teaspoon Dijon mustard, 1 teaspoon maple syrup, 1 ½ tablespoons lemon juice, 1 teaspoon apple cider vinegar, salt and ground black pepper to taste, 2 teaspoons whole grain mustard
Add oil: drizzle slowly while whisking until creamy.
