Creamy Asparagus Pasta Recipe

Ingredients
  

  • 10 ounces asparagus, cut into about 2-inch pieces
  • ½ pound dry spaghetti
  • cup red onion, finely chopped
  • 2 cloves garlic, finely chopped
  • 4 cherry tomatoes, halved
  • 1 tablespoon butter
  • 1 tablespoon olive oil
  • 1 tablespoon tomato paste
  • 1 cup heavy cream, 35%
  • ½ teaspoon dried thyme
  • salt and pepper, to taste
  • freshly grated Parmesan, for serving
  • fresh thyme, for serving

Instructions
 

  • Cook the pasta: Cook the spaghetti until al dente. Drain the pasta, but reserve ½ cup of the pasta cooking water.

  • Cook the asparagus: In a large skillet, heat 1 tablespoon butter and 1 tablespoon olive oil over medium heat. Add the asparagus and cook for about 4 minutes.

  • Add the aromatics: Add the red onion and garlic and cook for another 1 minute.

  • Build the base: Add the halved cherry tomatoes, tomato paste, and dried thyme. Season with salt and pepper and cook for about 2 minutes.

  • Make the sauce: Pour in the heavy cream and ½ cup of the reserved pasta water. Bring the sauce to a boil, then reduce the heat. Add the cooked spaghetti and cook everything together for about 3 minutes, until the pasta is heated through and coated in the sauce.

  • Serve: Serve sprinkled with freshly grated Parmesan and garnish with fresh thyme.
