Prepare coating: In one shallow bowl, combine the flour with the remaining paprika, salt, and pepper. Place the beaten eggs in a second bowl and the crushed cornflakes in a third.

Coat chicken: Dip each piece into the flour, then the eggs, and finally press into the crushed cornflakes until evenly coated.
Air fry: Lightly spray the basket and chicken with cooking spray. Arrange the nuggets in a single layer and cook for 5 to 6 minutes. Flip, spray lightly again if needed, and cook for another 5 to 6 minutes, until golden brown and the chicken reaches 165°F.
