  • 1 large beetroot, peeled and thinly sliced
  • 4 cups mixed salad greens
  • ½ cup crumbled goat cheese
  • ¼ cup walnuts, chopped
  • 2 tablespoons red wine vinaigrette
  • 1 tablespoon olive oil
  • salt and pepper to taste

Instructions
 

  • Preheat your oven to 400°F (200°C).
  • Place the beetroot slices on a baking sheet and drizzle with olive oil. Roast them for 20-25 minutes until they are soft.
