- Preheat the oven to 400°F (200°C). Whisk the cottage cheese and egg white with a fork until smooth, then stir in the oregano, red pepper flakes, black pepper, and salt.
- Line a baking sheet with parchment paper. Spoon the mixture into 2 equal rounds, spreading each into a thin circle about 5 inches wide.
- Bake for 20 minutes. Halfway through, blot any pooled liquid with a paper towel and use a spatula to push the edges back into a round. Bake until the bases are set, golden, and crisp at the edges.

Air fryer method:
- Preheat the air fryer to 400°F (200°C). Trim the parchment to fit the basket, lower it in with the shaped bases on top, and air fry for 12 to 15 minutes, blotting off liquid and reshaping the edges halfway through, until golden and crisp. Cook one base at a time if they do not both fit in a single layer.
- Let the bases cool on the parchment for 10 minutes so they firm up and release cleanly. Meanwhile, fry the eggs and chop the chives.
- Spread 1 teaspoon of pesto over each base. Top with a fried egg, sliced avocado, a handful of arugula, and the chives, then add a drizzle of sriracha if you want heat. Serve right away.

Blot the liquid that pools on the bases halfway through cooking. That one step is the difference between a base that crisps and one that stays soft and eggy.
📋 Tips
- Use a thick, low fat cottage cheese. Watery or whipped tubs spread too thin and take much longer to set. Small curd holds its shape best.
- Spread the bases thin and even. Thick spots stay soft in the middle while the edges are already done. Aim for about a quarter inch.
- Start checking early. Every oven and air fryer runs differently, so look at 15 minutes and pull them the moment the edges turn golden.
- Top them right before eating. The bases soften as they sit under wet toppings, so assemble and serve within a few minutes.

- 🍱To Store. Keep leftover plain bases, without toppings, in an airtight container in the fridge for up to 2 days.
- 🥶Freezing. Not recommended. The cottage cheese base turns watery and loses its crispness after thawing.
