- 1 ½ cup uncooked rice, about 2 cups cooked
- ¾ cup ham, medium diced (about 1 ½ cup)
- ½ cup frozen peas
- ½ medium brown onion
- 2 large eggs
- 1 garlic clove, minced
- 1 teaspoon ginger, grated
- ⅓ cup low sodium soy sauce
- Salt and black pepper to taste
- 1 tablespoon sesame oil
- ½ cup sweet corn or freshly cooked corn on the cob kernels
Cook the rice according to package directions. Set aside to cool.
In a nonstick skillet saute onion until translucent, add in garlic, ginger, and ham. Cook for a couple of minutes and add corn and peas. Scramble the eggs.
Stir in the rice and add soy sauce and sesame oil. Season with salt and pepper if needed.
Garnish with fresh parsley and serve hot.
