Zucchini Date Nut Bread

Enjoy super moist and delicious easy zucchini date-nut bread.

In a mixing bowl, blend together the flour, baking soda, baking powder, and salt. In another bowl, whisk the sugars, oil, vanilla, and eggs until well combined.

Stir in the grated zucchini, cinnamon, nutmeg, dates, and nuts. Gradually add the dry ingredients to the wet mixture, stirring until just combined; avoid excessive mixing.

Pour the batter into the prepared pan and bake for 60-70 minutes, or until a toothpick inserted into the center of the cake comes out clean.

Allow the cake to cool in the pan before transferring it to a wire rack to cool completely.
