Preheat oven to 325°F. Line a baking sheet with parchment paper.
In a food processor or bowl, combine butter, flour, icing sugar, salt, and vanilla. Beat with an electric mixer on medium until small crumbs form, scraping the sides as needed.
Add sprinkles to the dough and knead until a ball forms. Place the dough between two sheets of parchment paper and roll it to about ½ inch thick.
For extra sprinkles, roll the dough again to press them in for a beautiful presentation.
Cut out heart-shaped cookies and transfer them to the prepared sheet. Bake for 17-18 minutes until the edges are golden brown. Cool completely on wire racks.
