Enjoy a slice of this strawberry banana bread for breakfast, dessert, or as a sweet snack alongside some soft butter, strawberry jam, or whipped cream.
In a large bowl, mix egg. Sugars, vanilla, sour cream, and oil. Add in 1 ¼ cups flour, baking powder, baking soda, salt. Gently stir all together until combined and add the mashed bananas.
Preheat oven to 350F. In a separate bowl mix strawberries and 3 tablespoons of flour or more if needed until all the strawberries are combined.
Add these to the batter bowl and stir with a spatula. Batter should be quite thick. Transfer the batter into the loaf tin, top with more strawberries for decoration.
Bake for about 55 to 65 minutes or until the top is golden, the center is set, and a toothpick inserted in the center comes out clean, or with a few moist crumbs.
Take the bread out from the oven and let it cool for 10-15 minutes. Then transfer to a wire rack to cool completely.
