White Chocolate Raspberry Cookies

White chocolate raspberry cookies are packed with white chocolate chips and freeze-dried raspberries, chewy on the outside and soft inside—a perfect treat with coffee or as a sweet snack!

Beat butter and sugars until creamy, then mix in egg and vanilla.

Whisk dry ingredients separately and gradually add to wet mixture.

Stir in raspberries and white chocolate chips. Chill dough for 30 minutes until firm.

Stir in strawberries and white chocolate chips.

Scoop 1 ½ tbsp dough into 2-inch balls. Place on a lined tray 3 inches apart. Bake for 10 minutes.

While warm, top with more raspberries and chocolate chips. Cool on tray for 5–10 minutes, then transfer to a rack.
