These strawberry shortbread cookies are soft, sweet, and loaded with chopped strawberries, topped with a sugar glaze. Enjoy them with cream cheese or whipped cream!
Mix strawberries, lemon juice, and sugar. Set aside.
Mix dry ingredients. Cut in butter until crumbly.
Add cream and knead until combined.
Stir in strawberries (discard excess juice).
Refrigerate dough between batches. Scoop 1½ tbsp dough onto a lined baking sheet. Sprinkle with sugar. Bake for 15 minutes.
Bake for 15 minutes.
Cool completely. Mix strawberry juice and powdered sugar for glaze. Drizzle over cookies. Enjoy!
