These Banana Oatmeal Chocolate Chip Cookies are soft, chewy, and packed with banana-chocolate flavor. The mashed banana adds thickness, while the oats give a chewy texture and melted chocolate in every bite!
Mash bananas until smooth and set aside. In a large bowl, beat butter and sugars until creamy. Add egg, vanilla, and bananas, and mix until combined. Set aside.
In a separate bowl, whisk together sifted flour, baking soda, baking powder, salt, and oats. Gradually add to wet ingredients, mixing on low until combined.
Fold in chocolate chips. Scoop 2 tablespoons of dough, rolling into balls. For smaller cookies, use 1 ½ tablespoons of dough per ball.
Place cookie balls on a lined baking sheet, spacing them at least 2 inches apart. Do not press them down!
Bake for 11-13 minutes, or until golden brown on top. The cookies should be soft in the middle and slightly risen.
Press extra chocolate chips on top after baking. Cool on the sheet for 5-10 minutes, then transfer to a wire rack.
