Preheat oven to 350°F. Line a baking sheet with parchment paper. Mix flour, baking powder, and salt. In a separate bowl, whisk eggs, sugar, and vanilla until dissolved, then stir in olive oil.
Gradually add dry ingredients to wet mixture. Mix until dough is soft. Roll out on a floured surface to ¼-inch thickness. No chilling needed.
Cut dough into shapes with cookie cutters. Transfer to the baking sheet. Re-roll leftover dough and repeat until used up.
Bake for 11-12 minutes until edges are golden.
Cool for 5 minutes, then transfer to a wire rack.
