You can't go wrong with an easy ham and potato breakfast casserole. Creamy potatoes topped with crunchy cornflakes make every bite cheesy and delicious.

Sauté onion in butter until soft. Whisk in flour, then gradually add broth and milk until thickened.

Season with garlic powder, salt, and pepper. Stir in ½ cup cheddar until melted.

Combine potatoes, ham, and sauce in a bowl.

Transfer to the dish, cover with foil, and bake for 60 minutes.

Mix crushed cornflakes with melted butter. Uncover casserole, top with remaining cheese and cornflakes. Bake uncovered for 10-15 minutes.

Let rest for 10 minutes. Garnish with parsley and serve.
