This soft, moist dairy-free banana bread is a naturally sweet treat, perfect with dairy-free butter, applesauce, nut butter, or jam!
Preheat oven to 350°F. Grease a 4.5" x 8.5" loaf pan or line with parchment. Mash bananas in a bowl, then mix in brown sugar and canola oil until combined.
Stir in eggs and vanilla until smooth. In a separate bowl, whisk flour, baking soda, cinnamon, and salt. Sift into the banana mixture in two batches, mixing until combined.
Pour into the loaf pan and bake for 45-55 minutes. Check doneness at 40 minutes with a toothpick.
If the top browns too quickly, cover with foil. Let the bread rest for 10 minutes before cooling on a wire rack.
