Blend cottage cheese until almost smooth. Add butter, sugar, and vanilla, then mix until combined but slightly chunky.
Mix flour, baking powder, and salt in a bowl. Gradually add to wet mixture, stirring until combined. Knead into a soft dough ball.
Cover dough with plastic wrap and refrigerate for 30 minutes.
Roll dough to ¼-inch thickness. Cut into shapes using cookie cutters and place on a baking sheet.
Bake at 350°F for 20–22 minutes until edges are golden. Cool for 5 minutes, then transfer to a rack.
Dust with confectioners' sugar or glaze once cooled.
