Love chocolate chip cookies? These chewy M&M cookies (no shortening!) are packed with rich chocolate flavor—perfect for a Christmas cookie tray or a sweet ice cream treat!
Preheat oven to 350°F. In a large bowl, beat butter and sugars until creamy. Add egg and vanilla, mixing until combined. Set aside.
In a large bowl, whisk dry ingredients. Gradually add to wet ingredients, mixing on low until combined.
Mix until nearly combined, leaving some lumps. Stir in M&Ms, then refrigerate for 30-60 minutes. Chill between batches for uniform cookies.
After chilling, the batter should be like playdough and not sticky. If too firm, let it soften slightly. Scoop 2 tablespoons of dough and roll into 2-inch balls (makes 13-14 cookies).
Place cookie balls on a parchment-lined baking sheet, 2 inches apart. Bake for 10-12 minutes.
The cookies will be soft inside but set as they cool, staying chewy and buttery. Let them rest on the pan for 5-10 minutes before transferring to a wire rack.
