Yaki Udon Noodles Stir Fry

Yaki Udon Stir Fry is a classic Japanese dish with a vegetarian twist. Chewy udon noodles are boiled, then stir-fried with vegetables and a rich soy sauce for the ultimate umami flavor!

Whisk sauce ingredients in a small bowl or jar.

Cook udon noodles as directed (2–3 minutes), separate with chopsticks, rinse under cold water, and drain.

In a large pan, sauté onion and mushrooms over medium-high heat until soft. Add garlic and bok choy, cook for 30 seconds.

Stir in sauce, toss noodles to coat, and serve with sesame seeds and sriracha mayo.
