Easy Summer Chicken Casserole

Zucchini Boats With Chicken are filled with the flavors of chicken parmesan. Easy and beautiful-looking dinner that everyone in your family or friends will love.

Preheat the oven to 400F (200C). Scoop out the flesh and seeds out from zucchini. 

Drizzle with olive oil, and season with salt, and pepper. Bake for 15 minutes.

Saute diced onion until softened. Add tomatoes, chicken, zucchini flesh, Italian spices, and garlic powder. Add parmesan and simmer until sauce has thickened.

Fill zucchinis with the filling, top with cheese and bake for 10 minutes.

Serve these creamy chicken stuffed zucchini boats right away with more parmesan and fresh chopped parsley. Enjoy!
