Preheat the oven to 350 degrees. Add the butter and sugars to a bowl and use an electric mixer on low to combine.
Add the egg and vanilla and mix on low. Set the mixture aside.
In a different bowl, combine the dry ingredients. Whisk to combine and then add to the wet ingredients.
Stir in the chocolate chips and coconut then chill the batter in the fridge for 1 hour. Bake for 10-12 minutes.
