Pasta Fazool (Pasta e Fagioli) is a hearty Italian soup with sausage, pasta, and beans, offering rich, comforting flavors.
Heat 1 tbsp oil in a large pot over medium-high heat. Brown beef, drain excess fat, and set aside.
In the same pot, heat 1 tbsp oil. Cook onions, carrots, and celery for 5 minutes. Add garlic and sauté for 30 seconds.
Add Italian herbs, sugar, salt, pepper, and beef. Cook for a few minutes. Add beef broth, tomato sauce, water, and tomatoes. Simmer over medium-low heat until vegetables are tender.
Cook ditalini pasta until al dente. Stir cooked pasta, white beans, and kidney beans into the soup. Adjust seasoning if needed.
If the soup is too thick, add water or broth. Cook for 1 minute. Stir in parsley and serve warm with grated Romano or Parmesan cheese. Enjoy!
