Banana Bread With Dried Cranberries

This cranberry banana bread blends tart cranberries, nuts, and chocolate for a festive, customizable holiday treat!

Preheat oven to 350°F. Grease a 9x5" or 8" loaf pan, or line with parchment for easy removal.

Mash bananas in a large bowl until smooth. Stir in coconut butter, oil, vanilla, and eggs, then whisk in brown sugar.

Gently fold dry ingredients into wet. Stir in cranberries and walnuts, then transfer to the loaf pan.

Bake at 350°F for 50-60 minutes, checking at 50 minutes. A toothpick should come out mostly clean.

Cool in the pan for 15 minutes, then run a knife around the edges and transfer to a wire rack. Slice, serve, and store leftovers in an airtight container.
