This Baked Chicken Pesto is a quick sheet pan meal ready in under 30 minutes! Chicken coated with basil pesto and baked with cremini mushrooms, perfect over rice or grains.
Massage pesto into the chicken (reserve some for the mushrooms), and season with salt and pepper. Marinate for at least 1 hour.
