Sauteed Cabbage Lavash Wraps

This isn't your ordinary tortilla wrap - it's far superior. Packed with sautéed cabbage and cheese, these vegetarian lavash wraps are perfect for a no-cook lunch or a quick weeknight dinner.

Sauteed Cabbage

Cabbage is my favorite ingredient for budget-friendly and quick dinners. From my cabbage soup, cabbage pie to this these breakfast favorite savory pancakes, these lavash wraps are sure to impress!

🛒Ingredients

  • Cabbage - while green cabbage is preferred, you can also use red cabbage, savoy cabbage, napa cabbage.
  • Onion - adds flavor and sweetness.
  • Carrots - adds sweetness and color.
  • Oil - olive oil or your preferred cooking oil.
  • Tomato Paste - flavor enhancer, available in a tube.
  • Tortilla or lavash bread - feel free to opt for either tortillas or lavash wraps to suit your preference. I suggest using thin lavash bread as they're more flexible and less prone to cracking when folded.
  • Cheese - mozzarella, cheddar, or Mexican blend, all perfect for a delightful cheese pull in your breakfast tortilla.

How To Make Sauteed Cabbage

Heat olive oil in a skillet over medium heat. Saute onion for 2-3 minutes, then add carrots for 3 more minutes.

Add cabbage and saute for 5 minutes.

Create a well in the middle, add tomato paste, cook for 1 minute.

Season with salt, pepper, sugar. 

Add water, braise on low for 25 minutes, stirring every 5 minutes. Serve with parsley and sour cream. Enjoy!

Note: You may have leftovers from sauteed cabbage as for the filling of 8 tortilla pockets you’ll need about 2 cups of sauteed cabbage.

Mix the sauteed cabbage with dill or parsley if using.

Fresh herbs are optional but add more flavor.

On each tortilla add 3 tablespoons of sauteed cabbage each, and top with mozzzarella.

Wrap like in the photo, and brush with egg yolk.

Heat up a skillet over medium heat and add cooking oil.

Cook for 1-2 minutes on each side.

Serve with sour cream.

Sugar - sugar enhances the cabbage flavor but feel free to leave it out completely.

📋Tips

  • Keep ingredients centered for easier wrapping. If the wrap breaks, warm it slightly before wrapping it to make it more pliable.
  • Don't overcook cabbage. Cabbage is forgiving but cook for at least 15 minutes for desired softness. White cabbage cooks faster than others. Thinly slice for even cooking. 
  • Add butter or garlic for extra flavor. 
  • Adding acidity like lemon juice or vinegar enhances taste of cabbage. Try tasting before and after adding acid for a fun experiment.

Storing Leftover Lavash Wraps

  • 🍱To Store. You can refrigerate the sauteed cabbage for 3-4 days. The folded tortilla wraps will keep in the fridge for a couple of days but may become soggy.
  • 🔥To Reheat. Reheat in the microwave or in the skillet.

  • taco dip - for dipping the lavash bread, so good!
  • taco salad or macaroni salad
  • stuffed butternut squash
  • pan fried chicken thighs
  • pulled pork

Ingredients
  

For Lavash Wrap

  • 8 medium tortillas, or thin lavash bread
  • 2 tablespoon fresh dill or parsley, chopped
  • 1 egg yolk
  • 1 teaspoon cooking oil
  • ½ cup mozzarella, grated
  • sour cream for serving

  • 3 cup shredded cabbage
  • ⅓ cup carrot, grated
  • 2 tablespoon onion, diced
  • 1 ½ tablespoon cooking oil
  • ¼ cup warm water
  • 1 tablespoon tomato paste, tubular
  • ½ teaspoon sugar
  • salt to taste
  • black pepper to taste

Instructions

    For anyone looking to save on wraps, you can actually make lavash bread at home with some basic ingredients. There's something satisfying about making it from scratch. It pairs really well with the sauteed cabbage. Just a thought for fellow DIYers.
