Why We Love This

  • This simple and classic sweet relish will keep fresh for up to a week if stored and sealed properly. Makes an excellent gift too 🙂
  • Easy to make, is a healthy alternative to the store version with plenty of additives!
  • A great alternative to simple grilled corn on the cob that you probably already ''over-enjoyed'' during the corn season.
  • Our favorite way to use corn relish is to serve in hot dogs, salads, tacos, and burgers. Well, it is our staple recipe to have on hand during summer bbq parties along with dill pickles. Always!
  • Flavorful relish bursting with flavor, sweet, tangy with added extra heat!

Ingredients

  • Corn - For optimal flavor be sure to use the best, freshest corn available. Canned corn will work too but will not give you the same results. Freshly grilled and charred corn kernels are the way to go here!
  • Veggies - brown or sweet onions taste amazing in here, feel free to increase it even more if you like the flavor. Choose any type of bell peppers, tri-color even better or your favorite chopped combination of vegetables (celery, carrot, onion)
  • Fresh herbs - chopped cilantro or parsley and even a few stalks of spring onions will create a new flavor.
  • Turmeric - for added color and a little different flavor. Want to try a fun alternative or even add as extra? Try curry powder or paste!
  • Jalapenos - other pepper varieties such as red hot or serrano peppers can be used here too. If you have some adobo paste sitting in the fridge you could use it instead or for added flavor. Very spicy though for those who love things on the hotter side...

Instructions

Corn. Roast the corn on the grill, boil or cook in the oven. Choose one of the options below:

How to cook corn on the cob (3 ways!):

Bake – rub the cobs with oil and place the corn on a sheet pan in the middle of the oven and bake for 30 min at 425 F (220 C). If you like the corn extra soft then let it bake for another 25 minutes.

Grill – Soak the corn in warm water for 15-20 minutes, oil the grates, and place the cobs directly on the grill until all sides are slightly charred (about 20 minutes.

Boil – For the stove, add the cobs, salt to taste into a large pot and fill up with water until it fully covers the vegetables

Corn on the cob boil time: Well, I know people do this differently, but my way is to take it to a boil and then simmer on medium-low for 10-15 minutes. Taste test for doneness and seasoning.

Optional: After the corn is cooked through, rub with butter or vegetable oil and grill until slightly charred (grill pan can also be used here).

Once cooked through, and cooled to the touch cut the corn kernels off the cob and set aside.

Now you can proceed with the instructions for the corn relish recipe.

In a large saucepot or a medium saucepan over medium heat add vegetable oil and once hot saute bell peppers.

Stir until they start to soften and add in jalapeno, garlic, turmeric, salt, and pepper.

Stir until just combined and follow with cooked corn, sugar, and vinegar. Stir the mixture until sugar is dissolved.

Remove from heat, squeeze in lime juice and let cool.

Once cooled, divide between glass jars/containers and refrigerate for 6 hours or overnight is best.

FAQ

Can you freeze fresh corn relish?

Ideally, it is best to consume freshly made corn relish right away or within a week of it being refrigerated. However, if you do need to refrigerate, place it in a zip lock bag and refrigerate for up to 2 months. Thaw at room temperature and reheat until just warm.

What is hot dog relish made from?

Hot Dog Relish is traditionally made with sweet pickle relish and yellow mustard. You will find these in the grocery stores, in bottles from many famous brands (e.g. Heinz). These taste very tangy, sweet, and savory. What I do like about this relish recipe that it is made with corn and is a better (even healthier) alternative to the classic relish version.
