Creamy Cucumber Tomato Salad is like a bowl of summer sunshine. It’s fresh, quick to make, and loaded with crisp cucumbers, juicy tomatoes, and a tangy, creamy dressing.

This easy salad is a staple in my kitchen, perfect for pairing with grilled chicken, fish, or a cozy casserole.

Creamy Cucumber Tomato Salad

Every time I make this, I’m reminded of backyard barbecues and family potlucks. It’s nostalgic comfort food that’s also light and healthy.

Plus, you can customize it however you like—try adding fresh dill, crumbled feta, or even a sprinkle of bacon bits to make it your own.

It is a simple foolproof recipe that even a beginner can make.

Whether you’re new to Cookrita recipes or a long-time reader, this salad is proof that cooking fresh, wholesome dishes doesn’t have to be complicated. For more salad inspiration, check out my Easy Salad Recipes!

🛒Ingredients

Every great recipe starts with the right ingredients, and this salad is no exception. Here's what you’ll need:

  • Cucumbers - English cucumbers are my favorite for their mild flavor and few seeds, but regular ones work too—just scoop out the seeds.
  • Tomatoes - Any juicy ripe tomato will work. I also love using cherry or grape tomatoes for their sweetness.
  • Onion - A sweet onion adds a gentle tang, but red onion works if you prefer a bolder flavor.
  • Creamy Dressing - Made with just sour cream and a little drizzle of lemon juice works wonders! If you want ultra creamy dressing, use mayo instead of ½ of the sour cream.

👩‍🍳 You'll find the complete list of ingredients below the recipe card.

🥣How to Make Creamy Cucumber Tomato Salad

  1. Prep the Veggies: Slice cucumbers, halve the tomatoes, and thinly slice the onion.
  2. Make the Dressing: Whisk together sour cream, lemon juice, and your favorite seasonings (salt, pepper, and optional dried or fresh herbs).
  3. Combine and Toss: Add the veggies to a bowl, pour the dressing over, and toss until evenly coated.
  4. Chill and Serve: Let the salad rest in the fridge for 15-20 minutes to let the flavors meld together.

📋Tips for Success

  • Use fresh ingredients. Fresh cucumbers and tomatoes make all the difference. Keep the cucumber skin on for extra crunch.
  • Mild onions. Soak raw onion slices in cold water to mellow their flavor.
  • Silky dressing. Let sour cream or yogurt warm to room temperature for a smoother dressing.
  • Flavor boost. Chill the salad before serving—it helps the flavors meld beautifully.

Variations

This salad is super versatile—here are some ideas to make it your own:

  • Vegan Version: Swap sour cream for plant-based yogurt or dairy-free alternatives.
  • Zesty Additions: A splash of lemon juice or white wine vinegar amps up the tang.
  • Mediterranean Twist: Add feta, olives, and capers for bold flavors.
  • Spicy Kick: Sprinkle in red pepper flakes or diced jalapeños for heat.

Ingredients

  • 1 English cucumber, sliced into half moons or circles, don’t cut it too thin
  • 2 medium tomatoes, sliced into quarters
  • 1 cup brown onion, sliced (I cut the long strips in half)
  • 5 tablespoons sour cream, or low fat sour cream or Greek yogurt
  • salt and black pepper to tast
  • parsley for garnish, or dill

Instructions

  • Prep the veggies: Slice the cucumbers, halve the tomatoes, and thinly slice the onion.
2 medium tomatoes, 1 cup brown onion, 1 English cucumber
  • Mix the dressing: Whisk together sour cream, and your favorite seasonings like salt, pepper.
5 tablespoons sour cream, salt and black pepper to tast
  • Combine and toss: Add the veggies to a large bowl, pour the dressing over the top, and toss until everything is coated.
  • Chill and serve: Let the salad chill in the fridge for 15-20 minutes before serving to let the flavors meld together.
    parsley for garnish

Notes

  • Fresh Ingredients: Choose the freshest cucumbers for the best crunch. Keeping the skin on adds extra texture.
  • Onion Tip: Soak raw onions in cold water if you want a milder taste. It helps reduce their sharpness.
  • Creamy Dressing: Let your sour cream or yogurt come to room temperature for a smoother, silkier dressing.
  • Flavor Boost: Chill the salad in the fridge for a while to let the flavors blend. If you have leftovers, you may need to add a pinch of salt. The veggies release liquid, which can water down the flavor. This salad is best enjoyed fresh!

🤷Frequently Asked Questions

How can I make this dairy-free?

Use coconut-based or cashew-based alternatives instead of sour cream, or opt for plant-based yogurt.

What cucumbers work best?

English cucumbers are ideal because they’re seedless and have thin skin, but regular cucumbers will work. I'd prefer to remove the seeds as it will make the salad too watery.

What type of tomatoes should I use?

Cherry or grape tomatoes are best for their sweetness and juiciness. Regular ripe tomatoes or firmer beefsteak tomatoes are delicious. You don't have to remove the seeds from tomatoes.
